Hey!  I’m Kimmi and I’m passionate about food; cooking it and eating it (especially eating it). I’m just a home cook, not a chef nor an expert by any means; I’m actually a nurse who loves food.  I currently live in Huntsville, Alabama and have lived in different cities in Maryland, North Carolina and Tennessee, always looking for the very best food I can find and/or cook.

The best way to learn how to eat new foods is to learn how to cook them. This way, you’re able to work with the food and observe it through the entire process of it becoming a meal. Come with me on this new adventure I’ll try new restaurants and post my favs as well as post my most requested recipes.

I absolutely adored this quaint little upscale English Pub located on the historic downtown square in Huntsville. From my understanding it is Huntsville’s first and only authentic British pub. The menu focuses on upscale English and Irish fare, selections of perfectly grilled steaks, fruits of the ocean, house-cured charcuterie, and beautiful warm salads. So let’s talk about what I focused on.

First, let me say, that you may not get the exact thing that I had because they have blackboard specials that they rotate nightly which consist of hand-carved steaks, fresh seafood, and delicate desserts. I started with the Chef Barry’s Homemade Charcuterie and Tapas for Two. TO DIE FOR!!! And I don’t even like Charcuterie. Go Figure!!  Maybe because most Boards are meat and cheese. This one had EVERYTHING; In-house smoked, cured meats and terrines made in-house by Chef Barry served with a selection of international tapas, homemade breads, crackers, and Poppy & Parliament chutney and relish. And they’re always different and unique.

For my entrée I had the Ribeye. Honestly, I don’t recall the Blackboard special name that they called it. But it was, hands down, the best steak I’ve ever had. It was perfectly cooked to temp, tender, flavorful without losing its flavor. I could go back right now. I’ve been for Brunch; I’ve been for Lunch and Dinner and have yet to be disappointed. I’m not even going to try to talk about the A Tart Monsieur I had for lunch. It’s by far and away, the best thing they have. Go to https://www.thepoppyandparliament.com/eat and peep their menu. I’m pretty sure they will quickly rise on you “go to” list, as they did mine.

I didn’t talk about dessert because I didn’t get any. I was fat and full by the end of dinner 🙂

  • Always, wash your hands Before and After handling raw meat.
  • Never thaw meat on the counter, thaw in the refrigerator, microwave or cool water bath.
  • Always wash cutting boards and plates after having been in contact with raw meat.
  • Always cook to appropriate internal temperatures.  Safe internal temperatures vary based on cut.
  • Clean as you go. Makes cleaning up after cooking much easier.

The old cliche that “Food is Fuel” is true. Food is powerful in fueling the body and the soul. Really good food is intoxicating; and it’s as close as your own kitchen. How many times do you recall a moment in life based on the food that you were eating at the time. Many wonderful moments in time are with good food and good friends.

I am not a chef.  I love to cook and I love to eat (not necessarily in that order). This mini cookbook has 15 recipes that seem to go over very well and are super simple to make with lots of flavor. It’s not fancy, because I’m not fancy. I cook as a quite place to get my mind, body and soul on one accord and to provide a bonding moment for those who enjoy it.

That’s my hope, that these few recipes create a moment for you, whether it’s in the process of preparation or the activity of eating. I hope they inspire you to “shoot your shot” in the kitchen.
